Most food manufactures have documented procedures for controlling productions environments and for handling all inbound & outbound goods.
But what about the microorganisms that enter with the ingredients, packaging, maintenance equipment, tools, work phones, etc.?
Every day materials move between areas with different hygiene levels and from suppliers outside the factory. The challenge is maintaining production flow, while ensuring the production from unwanted microorganisms. With goods moving between production areas there is a risk of cross contamination and bringing unwanted microorganisms into sensitive productions. Unwanted microorganisms can close a whole production or result in recall of an entire batch.
